Default VW crafter water issues.... help needed pretty please

Hi their, 1stly would just like to say how grateful I am of this forum as its very helpful when experiencing problems

I have a 2008 VW crafter pulls like a train, really good work bus (recovery truck) really do love it to bits but as of recent it's got me baffled.......

When I 1st got the truck I had timing belt and water pump changed along with a full major service, 11 months later still goin stronh until last week.....

I noticed coolant had spilled outta tha expansion bottle which had never happened before, so I topped up and carried on amongst my journey, a few days later the heater was blowing hot as usual then all of a sudden it went freezing, then hot again and carried on like this, no drop in water level!!! I had this for a few days then decided to change thermostat and try that and stilll have this annoying problem!!! Top hose is hot, 1 out of the 2 heater pipes is warm and bottom hose is freezing??????? Please help!! Also changed the electric water pump on heater pipes and can clearly tell that's running as you can here it moaning and groaning quite a lot!!
