having my 16" wheels banded 7.5 front & 8.5 rear, im sticking with 60 profile tyres as i like the gap that i have with my coilovers.
My question is what width tyre would be best to have , having as little stretch as possible, As isnt it a little dodgy on the the tyres???

With regard to keeping a 60 profile its not that straightforward. You need a wide enough tyre to suit the rim and then a suitable ratio to get the correct rolling diameter and then make sure its sufficiently butch to carry a T5.

How about 235/60R16 XL for the rear - right on the limit for width in terms of legal stretch with correct load and for the front you could use the same or a 225/60R16 XL also fits which gives good load 102 (okay not for T32s) and they will be a little on the smaller side for diameter (only a midgers).

will i have any inner arch issues using 235/60r16 rears
and 225/60r16 fronts, on banded rims 8.5j rears and 7.5j fronts???
